I made this Mermaid cake for Birthday girl, Addie, and was able to work on a few new techniques. I used gum paste for the very first time to model the mermaid, rocks, seaweed and starfish (using brown sugar for sand), as well as the ombre scallops. I made fondant from scratch to use to cover the cake (it tastes much better than the store bought stuff when it's made from marshmallows!). The cake was vanilla funfetti filled with chocolate ganache and frosted in (another new technique) vanilla bean swiss meringue buttercream. Overall, I'm very happy with the result! I still need a ton of practice covering cakes with fondant smoothly and modeling faces, but happy nonetheless ( and so was Addie!).
